Healthy Lemon chicken
Free range chicken breasts filleted length ways (so they are thin)
Olive oil
Squirt of honey
Few sprigs of lemon thyme
Sliced lemon on top
Cover with foil
Bake in moderate oven until cooked through (approx 25-30 minutes)
Serve with steamed greens (NOT microwave)
